The dashi question: what to ask before you order
How to ask about fish or animal stock when a Japanese dish looks vegetarian.
Dashi is a stock used in many Japanese dishes. If you avoid fish or animal ingredients, do not judge only by what is visible—ask whether the broth, sauce or seasoning contains fish or animal stock.

Look beyond the main ingredient
Tofu, vegetables or noodles can be served with a broth or sauce. The base of that broth is a separate ingredient question.
Make your boundary specific
“Vegetarian” can mean different things to different people. Say whether you avoid fish, seafood, eggs, dairy and animal-derived stock.
A kitchen check is a useful answer
Front-of-house staff may need to ask the kitchen. Give them time to check rather than forcing an immediate yes or no.
